James, a food historian and recent graduate of the University of Adelaide, has been selected for the upcoming season of The Great Australian Bake Off.

Baking an intricate pastry or a tiered cake under pressure can be stressful for some. But for James, slaving away in the kitchen takes him to the land of Zen.

“Baking is a form of meditation, relaxation and chill out time for me,” says James, who recently relocated to Sydney from Adelaide.

The Great Australian Bake Off“Baking is the only thing I get up before sunrise for! It started as a hobby and as I got into my early adult years I was looking for a creative outlet and cooking seemed to fit that.”

Having grown up in Adelaide, Maggie Beer is one of James’ food idols, and he’s “petrified” about her critiquing his food. “It’s a bit terrifying but there’s a warmth that comes from her,” he says.

The Great Australian Bake Off premieres on Tuesday 13 October at 8.30pm on LifeStyle FOOD.
